“Bean there, done that…” I feel like this is what it feels like growing up in a Hispanic household where beans are a staple in so many dishes. Whether it be moro de guandules (rice with pigeon peas), habichuelas con dulce (sweet beans), sancocho de habichuelas (bean stew), or just your classic white rice and beans, beans add a unique creaminess and richness to any plate. It honestly has to be one of my favorite ways to incorporate protein and fiber because, besides being delicious, it’s a complex carb that will keep you full for hours, helping you power through all the greatness that awaits you. And the best part about beans is that there are so many varieties to choose from…chickpeas, lentils, edamame…you name it, the list goes on!
